Flank Steaks are cuts of beef from the abdominal muscles of a cow. The cuts are usually long and thin but may vary slightly. Because the cuts are full of tough connective tissue, it is not usual for the steaks to be marinated before cooking. There are many different ways to cook and present flank steak. A popular and well known recipe from North America is called London broil. In this recipe the Flank Stake is first marinated and then cooked by either grilling or broiling until leaving the outside brown and the inside rare or medium rare.
