I created this company with the desire to educate and share my knowledge of smoked meats and sausages to the public. As an apprentice meat cutter I attended a trade school in Washington to learn how to cut meat the old school way. Much of the credit for this knowledge must be given to my first market manager, Bill Girkman. Bill, without your persistence and hard-nosed attitude I would not be the meatcutter that I am today.
